The Pangi Tree and Seed Harvesting

Pangium edule reaches maturity slowly, requiring around 15 years before it produces viable seed pods. This extended growing cycle makes commercial plantation cultivation impractical, so pangi seeds are harvested exclusively from wild trees. The seeds themselves contain hydrocyanic acid and require careful processing: they are cooked, then buried and fermented in the ground for an extended period. This fermentation transforms the seed kernel into a dark brown colour and renders it edible as keluak, a traditional ingredient in Southeast Asian cuisine.
